The other half happens at the counter, not the shelf — in a kitchen where gluten-free and gluten-containing food are prepared side by side. The FDA Threshold That Explains Why This Matters
In the United States, a food can only be labelled "gluten-free" if it contains less than 20 parts per million (ppm) of gluten — the lowest level that can be reliably detected with current scientific testing methods, and the level most people with coeliac disease can tolerate without triggering an immune response. That number is useful context for cross-contamination: it does not take a whole slice of bread touching your food to matter. A few crumbs, a smear from a shared knife, or residue in a porous surface can be enough to push a genuinely gluten-free meal over that threshold. This is why cross-contamination control is treated as seriously as ingredient selection in any household managing coeliac disease, not as an optional extra precaution.
The Highest-Risk Spots in a Shared Kitchen
Not every surface carries equal risk. A few specific items are responsible for most accidental exposures, largely because they are porous, hard to see into, or used interchangeably without anyone noticing:
- Toasters and toaster ovens. Crumbs collect in the tray and along the heating elements and transfer directly onto the next slice, regardless of what that slice is made of.
- Wooden cutting boards and wooden utensils. Wood is porous. Once gluten works into the grain, ordinary washing does not reliably remove it, and knife scoring makes the problem worse over time.

Fixes That Actually Hold Up
The goal is not to sterilize the kitchen — it is to break the specific transfer points above. In practice, that means:
- Get a second toaster, or use toaster bags. A dedicated gluten-free toaster is the single highest-value fix on this list because there is no cleaning routine that reliably empties a shared toaster of crumbs.
- Assign a cutting board and utensil set. Colour-coding (a bright board and set reserved only for gluten-free prep) removes the guesswork that leads to accidental reuse. Plastic or glass boards are easier to fully clean than wood if a shared set isn’t practical.
- Buy a second colander, or drain gluten-free pasta first. If a second colander isn’t in the budget, cook and drain the gluten-free batch before the wheat pasta goes anywhere near the pot.
- Use squeeze bottles or separate jars for condiments, or designate a "clean knife" rule. Squeeze condiments avoid the double-dip problem entirely; where that’s not practical, a labelled jar for gluten-free-only use is the next best option.
- Keep a separate sponge and dish brush for gluten-free cookware, or move to a dishwasher, which is generally more reliable than hand-washing for fully removing residue.
- Store flour in sealed containers and bake gluten-containing items when the gluten-free cook isn’t actively prepping nearby, wiping down surfaces afterward rather than assuming a visual check is enough.
- Don’t reuse frying oil across gluten and gluten-free batches. Keep a dedicated bottle, or fry the gluten-free items first, always.
None of this requires duplicating an entire kitchen. Most households manage it with a handful of dedicated items — a toaster, a cutting board, a colander, a sponge — and a couple of habits (condiments in squeeze bottles, gluten-free food cooked or fried first).
