When this interesting looking vegetable called a kohlrabi turned up in my vegetable box the other day I didn’t have the slightest idea what to do with it. Learning that it could be eaten raw led to the creation of this simple and refreshing salad.
Isn’t the kohlrabi such an odd looking vegetable? Ready to eat raw as it comes, it can be sliced super thin by using a mandolin, vegetable peeler or slicer.
Using similar ingredients to what you might find in a coleslaw, I wanted to avoid the heaviness from using mayonnaise or cream. Experimenting with some fresh parsley from the garden and a lime sitting in the fridge I thought that this combination was a fresh and tasty variation to a typical side salad.
- ½ kohlrabi
- ⅛ red cabbage
- 1 carrot
- ½ fresh lime
- Thinly slice the kohlrabi, cabbage and carrot
- Chop parsley and squeeze the juice of the lime over the vegetables, combining all ingredients well.
