After spending the last week in the Italian sunshine (and glorious 30 degree + temperatures) I must admit that I was slightly dubious about returning to the cold of England. But I have been pleasantly surprised as the day after our return the weather has improved dramatically. There is sunshine, warm sun, not too much wind and did I say that it is nice and warm?! Warm weather goes a long way with me!
I’ve been spending a bit of time in my balcony garden, replanting plants into bigger pots, sewing new seeds and randomly discovering that I have baby carrots growing even though I never planted them. Very strange – must have been in the salad mix I planted earlier this year!
My herb garden is now flourishing and I’ve got an abundance of coriander so last night I made a batch of fresh salsa which is great for outdoors, BBQ or a general healthy snack. Plus it is super cheap to make. Including a packet of plain corn chips – this cost less than £1 to make! 🙂
- ½ red onion, finely chopped
- 6 small/medium tomatoes, finely chopped
- a handful fresh coriander, finely chopped
- 1 teaspoon olive oil
- sprinkle of fresh cracked pepper
- sprinkle of sea salt
- Mix all ingredients together and eat!
