Last year I began a few tentative steps into the world of green smoothies by adding spinach a couple of times here and there to make what I called a deceiving chocolate milkshake. With a fridge completely full of different milks after recently reviewing the range of dairy free milk alternatives available, I set to try out a proper green smoothie for the first time!
If you have never tried a green smoothie before, this is the perfect place to start. You like banana’s? Peanut butter? You’ll love a banana peanut butter smoothie. Adding spinach to the mix literally does nothing to the flavour, turns it an awesome green colour while adding plenty of extra nutrients to your drink. You can literally put handfuls and handfuls of spinach in to your milkshake without noticing any taste change. It’s a perfect and delicious way to add extra vege to your diet if you struggle to eat vegetables during your lunch or dinner.
This smoothie is perfect for a quick breakfast on the go or a cool and refreshing snack on a hot summers day. Peel, chop and store bananas in ziplock bags in the freezer to make it even easier. Any sort of milk will work and feel free to add chia seeds for a bit of omega 3 or oats for some extra fibre or to make it a more substantial meal.
- 1-2 handfuls fresh spinach
- 1 large spoonful peanut butter
- 1 banana, peeled, frozen and chopped
- 1 cup soy milk
- 1 tsp chia seeds (optional)
- Blend all ingredients together for 2-3 minutes in a blender until smooth
- Serve immediately
